Cranberry Protein Balls

Ingredients
  • ⅓ cup walnuts
  • 1 cup oats
  • ¼ cup ground flaxseed
  • ¼ cup peanut butter
  • ¼ cup maple syrup (or honey)
  • Dash cinnamon
  • Dash salt
  • ½ cup craisins, divided
Instructions
  1. Place walnuts in food processor, and process them while you’re getting out the other ingredients.
  2. Add remaining ingredients, reserving ¼ cup of the craisins. Process until well combined. Dough will be a bit crumbly; that’s OK.
  3. Taste the dough. If it seems a little bland, add another dash of salt and process again. Once you like the flavor of the dough, add the remaining craisins and pulse a few times to stir them in and roughly chop them.
  4. Place a heaping tablespoon of dough in the palm of your hand, then squeeze it into a ball. Repeat with the rest of the dough. Store in an airtight container in the fridge.
