Deluxe Banana Muffins

This recipe is adapted from Jessica Seinfeld's Banana Bread recipe in her book "Deceptively Delicious."
Ingredients
  • ½ cup brown sugar
  • ¼ cup butter (softened) or canola oil
  • 1 egg
  • 3 mashed bananas
  • 1 teaspoon vanilla
  • ¾ cup white whole wheat flour
  • ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 350°F. Grease 12 cups of a muffin pan.
  2. In a large mixing bowl, beat the sugar and butter (or oil) until well combined, then mix in the egg, mashed bananas, and vanilla.
  3. In another mixing bowl, combine the flours, baking soda, baking powder, salt, and cinnamon. Add the flour mixture to the banana mixture, and stir just until combined (you don’t want to overmix, or the muffins will be dense and tough). Gently stir in the chocolate chips, if using (and I really hope you are!).
  4. Divide batter evenly among the 12 greased muffin cups. Bake for 20-22 minutes, or until the top of a muffin is firm when lightly pressed. Let muffins cool in their pan for 5 minutes, then remove from pan to cool completely on a wire rack.
Notes
You can also bake this in a 9”x5” loaf pan for 55-60 minutes.
